Fruit Snackin' Cake -Janice N.
*Note- This is a healthy cake that men really seem to like. It needs no frosting. 24 servings approx. 165 cal. per piece
1 1/2c. flour
1/2c. whole wheat flour
2c. oatmeal
1 1/2c. Splenda
2 3/4 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
3/4c. Egg Beaters
1c. orange juice
1/3c. applesauce
2 large carrots, shredded
2 medium tart apples, shredded
1c. raisins (can substitute other dried fruit like blueberries or cherries)
1c. dried cranberries (can substitute other dried fruit like blueberries or cherries)
1c. semisweet chocolate chips (it can't be totally healthy!)
1/2c. ground almonds (optional)
In a large bowl combine the first 7 ingredients. Add Egg Beaters, juice and applesauce. Fold in remaining ingredients. Pour into a greased 9"x13" pan. Bake at 350 for 40-45 min.
If you have a food processor it works great to shred the carrots and apples and a coffee grinder for the almonds. The unbaked batter does not look very appetizing but once it's baked it looks better. Because there is no sugar used I store the cake in the refrigerator if it's not going to be eaten in a few days. This is usually not a problem however.
Glow in the Dark Cake -- Phyllis C
1 box lemon cake mix
1 3 oz box lime Jell-o (sugar free is OK)
3/4 c water
3/4 c oil
4 eggs
Mix above ingredients. Bake at 350 until done, about 35-40 minutes. Use 13 x 11 pan or what ever you have. After cake has colled, poke holes in it.
Glzae 1/2 c lemon juice
2 c powered sugar
Drizzle over cake and let it run into the holes.
Serve with frsh strawberries.
Hot Fudge Pudding Cake - Rebecca L.
This recipe is for a 8x8 pan. Double it for a 9x13.
1 Cup flour
3/4 cup sugar
2tbsp cocoa
2tsp baking powder
1/4 tsp salt
1/2 cup milk
2tbsp shortening melted
1 cup chopped nuts
Mix dry ingredients. Add milk,shortening,and nuts. Pour into ungreased pan.
1 cup packed brown sugar
1/4 cup cocoa
Mix and Sprinkle evenly over batter. Pour 1 3/4 cups hot water evenly over all.
Bake @ 350 for 45 min.
Rhubarb Coffee Cake -- Kathy B
2/3 cup oil
1 egg
1 1/2 c. packed brown sugar
1 tsp. vanilla
2 1/2 cups flour
1 tsp. salt
1 cup milk
1 tsp. baking soda
1 1/2 c. finely chopped almonds or pecans
Cream oil, egg, vanilla and brown sugar. Mix in dry ingred., alternating with the milk. Stir in rhubarb and nuts.
Topping
1/3 c. sugar
1 tbsp. butter, melted
1/4 c. chopped almonds or pecans
nutmeg, as desired
Bake in two round pans or one 13 x 9 @350 oven for 30-35 minutes
