Easy Cheese Spread
Combine
6 oz package cream cheese at room temperature
1 package of dry Italian dressing mix.
Let sit for a few hours so flavors will blend. Eat immediately if you are impatient or have unexpected guests.
Mozzarella Caprese -- Sonja Ackerman
I lived on this last summer during fresh tomato season!
1 loaf good french bread
fresh garlic clove cut in half
Fresh tomatoes, sliced(if it's not summer you can use vine on tomatoes or romas)
Fresh mozzarella cheese, sliced
Fresh Basil leaves
Slice the bread diagonally in thin slices. Put on a cookie sheet in a 350 oven and toast one side. Flip over and toast the other side. Take out of the oven and rub the cut side of the garlic on the bread. Top bread with a slice of tomato, a slice of the cheese and a basil leaf. Yum!
Pastry Sausage Bites-Elaine
This is a simple recipe for British-style Sausage Rolls
- 1/2 package (17 1/4-ounce size) Pepperidge Farm Frozen Puff Pastry Sheets (1 sheet)
- 1/2 pound bulk pork sausage ( I use Jimmy Dean-Sage)
- Thaw pastry sheet at room temperature 30 minutes. Preheat oven to 400 F.
- Unfold pastry on lightly floured surface. Roll into 12 by 10-inch rectangle. Cut into 3 (3-inch) strips.
- Divide sausage into thirds. Roll each into a cylinder the length of the pastry. Place on edge of pastry strip. Starting at the long side, roll up. Press edges to seal.
- Cut each roll into 12 (1-inch) slices. Place cut-side down 1 1/2 inches apart on baking sheet (bake on sheet without holes in it or bottom will not brown properly). Bake 15-17 minutes or until golden and sausage is done. Makes 36 appetizers.
Tip: to make ahead, cut into slices and place on baking sheet. Freeze. When frozen, store in plastic bag for up to 1 month. To bake, preheat oven to 400 F. Place frozen slices cut side down on baking sheet. Bake 20 minutes or until golden and sausage is done.
Sausage Twirls -- Mary S.
1 16 oz. pkg. of pork sausage
2 c. biscuit mix
1/2 c. milk
1/4 c. butter or margarine, melted
1/4 c. red bell pepper, finely chopped, optional
1/4 c. green onions, finely chopped, optional
Combine biscuit mix, milk and butter in large bowl
until blended and refrigerate dough for 30 minutes.
Divide refrigerated dough into 2 portions and roll out
each portion on wax paper to 1/8 inch thick
rectangles, each about 10" x 7".
Spread half the uncooked sausage over dough, top
sausage with peppers and onions, if desired.
Roll lengthwise into a log.
Repeat process with remaining ingredients.
Place both logs, wrapped, in freezer until hard enough
to cut easily, about 1 hour.
Preheat oven to 400 degrees F.
Cut each log into 24 thin slices and place on
non-stick baking sheets.
Bake 15 minutes or until golden brown.
Remove twirls from oven.
Reheat to serve.
